The four sake categories are defined dependent on the percentage of rice polishing the grains have undergone and whether distilled alcohol has been added into the mix. The categories are called jumai, honjozo, ginjo and daiginjo. Sake is often enjoyed warm or heated but how you enjoy yours is entirely your personal choice.
