Although grapes need heat and sun, they need a mixture of weather types across the year to survive. Even down in the South of France, part of the key to the Provence rosé wines is that the Mediterranean Mistral wind moderates the temperatures. The South of England takes advantage of its mixture of sun and cooler climates to produce grapes of refreshing acidity. The wet winters additionally are a boon to longevity of healthy vines.
