Our range represents the plethora of flavours and styles available from this tiny region from the lighter, dry Manzanilla to more intense, deep Pedro Ximenez with its sweeter tones lending it to use in desserts and as a digestif. There is an amazingly wide range of different sherry options available from such a small, distinct region of Spain yet we have worked tirelessly to ensure our range represents as many quality examples as possible.
Solear is renowned for being one of the finest Manzanilla blends available. This wine is supremely elegant and pure. Through the fractional blending �solera� system it has been aged for 6 years and is Spain�s best selling Manzanilla. At 15% alcohol it should be treated like any white table wine; well refrigerated and consumed soon after opening to be enjoyed at its best.
Pale yellow in colour, this Manzanilla has an intense nose with woody notes, a touch of faded flowers and hints of nuts. On the palate, it is fleshy, very dry but with enough weight & texture and an excellent acidity that culminates in a slightly salty finish.

A golden yellow amber colour with reddish hues, typical of the variety and a hint of desired oxidation. Tertiary aromas hit the nose due to it's aging, followed by dried figs, roast almonds and alcoholic notes like whisky. Warm, full bodied and plenty of structure, fatty and oily viscosity. There is a hint of wood which rounds everything off.
Dark golden in colour, obtained by using both types of ageing. During the first three years it is a fino and after that it starts the oxidation process for at least five years. Dry with a yeasty, nutty aroma and a clean, dry finish.
Aged for at least 5 years it is a full-bodied, nutty sherry with a strong and fragrant aroma. Amber to mahogany in color, it is darker, smoother and less dry than amontillado sherries. Matured by the oxidation ageing process.

A blend of 100% Palomino grapes from Cartera and Macharnudo Alto, two of the best vineyards in Jerez Fermented in stainless steel and aged in a solera under flor for an average of five years. It's a characterful Fino, quite accessible, with notes of esparto grass and a lowish acidity palate that is quite round and great with food.
The real average age of La Bota de Manzanilla Pasada 90 �Capataz Cabo� is around 14 years. It is a complex and powerful wine, of balanced freshness and elegant oxidation notes that make it truly unique.
This is a wine for connoisseurs, bottled almost unfiltered in order to preserve its golden color and racy character. The nose shows very complex and intense aromas, and a remarkable roundness in the palate (the traditional buttery touch of old finos) as a result of the autolysis of dead �flor� yeasts resting on the bottom of the vessel.
