The malt whisky currently on the market also includes bottles from distilleries which have long closed. The base ingredients of the malt whisky are simply, malted barley, yeast and water but it's the way they're treated by each individual distillery which creates the flavours they are known best for. Many different elements go into the creation of the individual character of a malt whisky, including the length of fermentation, the size and type of stills used in distillation and the amount of the spirit that 'makes the cut.' Aged in ex-bourbon casks before being finished in sherry casks, Double Wood is an excellent example of what the Balvenie distillery can craft, even at 12 years. Nose: Gristy, supple nuttiness, grapey Palate: Sweet with good body. The bourbon characters develop; gentle spice with a little vanilla, a balancing peat lurking quietly in the substrata. This whisky has been matured for 14 years in traditional oak casks before being transferred to Caribbean rum casks to impart some extra flavour. This process has created a well-rounded and drinkable whisky with notes of fruit and vanilla.
On the nose one detects ginger, fruits and vanilla with a little mint and citrus. On the palate is oak and spice to the fore with hints of green apple and hints of fresh exotic fruit. Perhaps a touch of aniseed and lemon with a long barley finish.
