Grappa is produced by fermenting the pomace and then distilling the product in continuous stills or in the case of boutique and specialist grappa, in pot stills. Before bottling grappa is either rested in glass or aged in wood, to create distinctively different flavours. The majority of grappa are clear and un-aged but oak-aged products on the market has a golden, deeper colour reminiscent of a good single malt whisky.
