• Pour the wine into a decanter or carafe smoothly with a slow but steady hand.
• Stop pouring as soon as you see the wine becoming grainy with specks of sediment. Discard the remaining content.

As a rule of thumb, the wine should match the richness of the food you are serving. For instance, white meat, such as chicken and fish, go best with light white wines, such as chardonnay or a low-tannin red wine.
